Ingredients
aubergine
chopped chicken thighs
fusili pasta
chopped onion
garlic in a tube
chilli in a tube
tinned chopped tomatoes
dried basil
black pepper
Method
- Slice and salt the aubergine. Rinse and dry after half an hour.
- Cook chopped chicken thighs in oil. Set aside.
- Cook aubergines and onion in olive oil. When translucent add garlic and chilli.
- Add chopped tomatoes and basil and simmer.
- Cook pasta in plenty of salted water.
- Add chicken and cooked pasta to tomatoes and stir.
- Season well with black pepper.
